Salmon, tomato and basil salad

Serves 6  

8 ripe vine tomatoes
300 g cherry plum tomatoes
500 g poached salmon with tomato and basil
3 tbsp extra virgin olive oil
a small bunch of fresh basil leaves

  • Slice the vine tomatoes and arrange in a circle on six plates. Cut the cherry plum tomatoes into quarters and scatter over the top.
  • Break the salmon into large flakes and arrange on top of the tomatoes, then drizzle with a little olive oil and season with salt and pepper.
  • Garnish with torn basil leaves and serve immediately.
